Eggs Royal - Healthy Breakfast Recipe

If you are looking for a healthy breakfast recipe, which is easy and quick to cook, I recommend my healthy version of eggs royal. This nutritious and delicious recipe is ready in only 10 minutes and it will give you the boost you need in the morning.

Ingredients

2 serves / prep time 5 minutes / cook time 5 minutes

2 Wholegrain Seeded Bread Slices
Pinch of Salt

1 tsp Vinegar

4 Medium Eggs
1 Avocado 100g
Smoked Salmon

How to cook it



Fill a saucepan with and bring to the boil.
 Lower the heat and add a pinch of salt and a tsp of vinegar to the boiling water.
 Crack the eggs into a bowl before adding these into the water. This step will make it easier for you to add the eggs into the boiling water and you can make sure eggs are fresh. Create a swirl in the water and then add the eggs. Cook the eggs between 3 to 4 minutes or until the white is set. When cooked, pick the eggs from the water with a slotted spoon and place these on kitchen paper to dry.

Lightly toast the slices of wholegrain seeded bread and place these on the serving plate.
Halve the avocado, remove the stone and mash both halves of the avocado.
 Spread the mashed avocado over both slices of toast.
 Place the smoked salmon on top of the avocado.
 Place the cooked eggs on top of the salmon and season with salt and pepper. Complete this dish with fresh baby spinach leaves. These are great for your digestion and are packed with vitamins and minerals.

Tips and tricks



Make sure the eggs are fresh and good quality. Fresh and good quality eggs equals great flavour. If you are not sure how to determine if the eggs are fresh here are a few tips:

The white around the yolk should be thicker and should hold the round shape while cooking

Place the egg in a glass of water (don’t crack it). If the egg is floating or stands on one end it means it’s not so fresh.

When dropping the egg into the boiling water, make sure you drop it slowly and into the centre of the swirl you have created.
If you can, use wild-caught salmon. This is rich in Omega-3s, and has less fat and calories in comparison with the farm raised one.
