Healthy Breakfast Recipe: Veggie Frittata
If you are looking for a new breakfast option, I recommend starting your day with this delicious and easy to make veggie frittata. It will take you 30 minutes to make it and you can experiment with this recipe by adding your favourite veggies. And if you don’t have enough time to make it in the morning, you can also bake it the evening before and have a cold or reheated slice in the morning. Here’s what you need for this veggie frittata:
Ingredients for the Veggie Frittata
- 1 tsp of olive oil
- 3/4 cup of broccoli florets
- 1 red bell pepper (you can use any colour you like)
- 1/4 cup of finely chopped red onion
- 4 eggs
- 4 egg whites
- 1/3 cup of shredded or diced cheddar cheese
- fresh herbs for garnish like cilantro, parsley, oregano or chives
- salt and pepper to taste
Preheat the oven to 200° C. Cut the broccoli florets and the red bell pepper in smaller pieces.
In a pan (choose one that is oven friendly) heat the oil over medium heat. Cook the red onion until it softens. Add the bell pepper and cook for another 3 minutes. Add the broccoli florets and a tbsp. of water and continue to cook until the broccoli is tender. Occasionally stir.
Season the vegetables with salt and pepper and place these in a dish. Whisk the eggs and egg whites in a large bowl and season to taste. Add the vegetables and cheese and mix everything together. Pour the mixture back in the pan and place it in the oven. Bake for approx. 15 minutes and then remove from oven.
To serve garnish with the fresh herbs. You can also make a side salad from dark leafs or serve this with some fresh vegetables and avocado as a side.
